I'm making dinner this Saturday for a couple that are dear friends of ours. She is having a mastectomy today, so a bunch of us are providing food for their family for the next week or two. The problem that I'm having is that he is a diabetic. I was asked to make a meal that is low sugar or no sugar.

When I make meals for friends, I usually make chicken pot pie. However that is probably out of the question this time for dietary reasons. I was thinking about making a pot roast....

So, I decided to make baked chicken, mashed potatoes, and steamed carrots for dinner tonight. I got the chicken baking and when it was getting close to being done, I started my potatoes. When I pulled out the chicken it looked soooo disgusting! They were those Tyson boneless skinless frozen breasts in a bag that you can get at Sam's Club. They looked like they had the tips of every little feather still lodged in them. <img...
